Grilled Airline chicken breast: marinated with garlic and balsamic vinegar, served

Pan seared Jail Island Salmon with maple-ginger glaze, served with sautéed
butternut squash, spinach, and roasted potatoes

Ahi Tuna filet, peppercorn crusted, topped with sundried tomato-olive tapenade,
served with roasted potatoes, green beans and tomatoes in a lemon vinaigrette, and
pickled red onions. Please note, tuna is seared rare.

Veal paillard lightly breaded and fried in olive oil served with arugula, tomatoes,
balsamic reduction, and shaved Parmigiano Reggiano cheese

Veal Parmesan: Veal cutlets lightly breaded and fried in olive oil, topped with a
house made tomato-basil sauce, Parmigiano Reggiano cheese, and fresh mozzarella

Saltimbocca: Veal cutlets and Prosciutto di Parma sautéed with butter, white wine,
and fresh sage

Duck breast rubbed with rosemary and fennel seeds, pan seared and served with a
dried cherry and red wine sauce

Herb crusted New Zealand grilled rack of lamb with roasted red pepper coulis and
Bordelaise sauce

Grilled tenderloin: 10 oz. of premium beef topped with Bordelaise sauce

Tuscan-style grilled strip steak: 16 oz. of premium center-cut beef, served with sea
salt, balsamic reduction, and extra virgin olive oil

Meat entrées are served with roasted garlic whipped mashed potatoes and vegetable of
the day, except veal paillard
